Boil the sweet potatoes and mash them finely
Make a paste with the sugar, then add the mashed sweet potatoes and let it rest for a little while to cool down
Add the coconut milk, cornstarch, and egg yolks
Mix everything well
Place the mixture in a pudding mold or individual cups
Steam the puddings until they're set, about 25-30 minutes
Let them cool before refrigerating
