2 1/2 cups of grated coconut
2 cups of heavy cream
4 sweet potatoes
4 tablespoons of sugar
2 tablespoons of butter

Mix 2 cups of grated coconut and the cream in a saucepan
Let it simmer for a few minutes, then remove from heat: this is the coconut cream
Let it rest for 30 minutes
Remove all the liquid from the coconut and discard the pulp
Boil the sweet potatoes until they're soft
Peel and mash them
Add the coconut cream, sugar, and salt
Beat until light and fluffy
Pour the mixture into a flat baking dish
Bake in a hot oven for 15 minutes
Melt butter in a skillet
Add remaining grated coconut and cook for 2 minutes, stirring constantly, or until the coconut is lightly golden
Sprinkle this coconut over the pudding
Serve hot or cold
