Beat the eggs until frothy
Sift the sugar and cocoa powder into a bowl, then add 1 tablespoon at a time to the eggs, beating continuously
Add the vanilla extract and beat for an additional 3 minutes
Pour the mixture into a greased 16 cm diameter soufflé dish
Fill the dish carefully, eliminating any air bubbles
Place in a moderate oven (180°C) for about 30 minutes
Let it cool slightly before serving or unmolding from the soufflé dish
If desired, serve with whipped cream
