Peel the mangoes and cut them into small pieces
Scrape off as much fruit from the pit
Add the lime juice and sprinkle with sugar, let it rest for 10 minutes
Mix very well and, if desired, pass through a potato ricer and combine the yolks
Add cornstarch and beat well
Add beaten egg whites
Pour into a well-greased pudding mold and bake in a moderate oven, preheated, for 10 minutes
Reduce heat slightly and bake for an additional 30 minutes
Remove from the oven and let it cool in the same mold, then unmold
Refrigerate and serve with mango juice, if desired.
