Wash the apple and cut it into small cubes with the skin intact
Toast the bread and cut it into 1 cm squares
In a small, shallow baking dish (11 cm in diameter), layer alternating slices of bread and apple
Beat the egg
Add milk and vanilla extract
Pour over the bread and apple mixture
Sprinkle cornflakes and cinnamon on top
Bake in a moderate oven preheated to 170°C for approximately 55 minutes or until inserting a knife into the center comes out clean
Serve warm or cold, divided into 2 portions.
