12 slices of peach, pit removed
1/2 cup unsalted butter or margarine, softened
2 tablespoons clear raisins
2 tablespoons dark raisins
2 tablespoons crystallized orange peel, finely chopped (or other crystallized fruits)
1 tablespoon ground cinnamon
5 large eggs
4 cups whole milk
1/2 cup sugar
12 slices of peach, pit removed

Preheat a 9x13-inch rectangular baking dish
Spread butter or margarine on both sides of the peach slices
Cut each slice in half, forming two triangles
Arrange one-third of the peach slices in the prepared baking dish
Dust with raisins, crystallized orange peel, and cinnamon
Repeat layers, ending with peaches
Beat eggs only to combine
Heat milk with sugar until almost boiling
Pour slowly over eggs, stirring well
Pour into prepared baking dish over peaches
Cover loosely and let rest for 1 hour or refrigerate overnight
Preheat oven to moderate temperature (350°F)
Place the baking dish in a larger baking pan filled with hot water halfway up the side of the dish
Bake in a water bath for 1 hour, or until puffed and golden brown
Serve warm
Serves 10 portions
Note: For microwave preparation, reduce milk to half and bake on high for 30 minutes, omitting water bath.
