3 1/2 cups of white peach, peeled and cubed
3/4 cup of apricots, pits removed
5 eggs
3/4 cup of heavy cream
1 1/2 cups of milk
1/2 cup of rum

Grease a round baking dish with a diameter of 18 cm and a height of 8 cm, including the lid
Grease the inside of the lid as well
Add 1 tablespoon of heavy cream
Cover and shake well
Remove the cover and remove any excess heavy cream
Lay a layer of peach at the bottom of the dish
Dust with apricots and repeat this process until all ingredients are used up
In a bowl, whisk together eggs and heavy cream until smooth
Heat milk and rum almost to boiling point
Add this mixture slowly to the egg mixture, whisking well
Pour over the peach and apricots
Place the dish in a large saucepan with water
Cover and bring to a boil
Reduce heat and simmer for 1 hour, adding more water if necessary
Remove from water and let cool for 5 minutes
Dish out and serve warm, cold or at room temperature
If desired, top with whipped cream
