Cut the fish into pieces about 2.5 cm
Attach the stainless steel knife blade to the appliance
Add the fish and beat until well chopped
Add the butter and beat until smooth
Add the eggs one at a time, beating well
Add the cornstarch and seasonings
Beat until well mixed
While the motor is still running, slowly add the heavy cream and then milk
Pour the mixture into a greased 6-cup mold
Cover with aluminum foil, not too tightly
Place in a larger pan with boiling water that reaches halfway up the sides of the mold with the fish
Bake in a moderate preheated oven (180°C) for 1 hour or until a knife inserted into the center comes out clean
Demold and serve with a Hollandaise sauce (see recipe)
