Bake the oven to medium temperature and prepare the custard: place the sugar in the pie crust and bake at medium heat,
stirring constantly until it thickens and browns
Dust the pie crust with the mixture and reserve
In a separate bowl, mix together the milk and wheat flour and reserve
Mix together the eggs and egg yolks slightly
Add the sugar and mix well
Join the reserved mixture and tangerine juice
Cook in a sieve
Add the grated tangerine rind, butter, and salt and beat until smooth
Place the pie crust and bake in a water bath at medium heat until a toothpick inserted near the edge comes out dry (about 1 hour and 40 minutes)
When cooled, let it sit in the refrigerator for about 2 hours
Dismantle and serve.
