Place the tapioca and milk in a saucepan and cook for 15 minutes, until it thickens
Add the sugar and bring to a simmer, stirring constantly, until slightly thickened
Remove from heat, whisk in the grated lime rind, egg yolks, salt, and mix well
Pour into buttered molds
Bake in a moderate oven (170°C) in a water bath, until the surface of the pudding begins to brown
Serve chilled.
