Prepare the pudding
Combine all ingredients in a blender and blend lightly
Pour the mixture into a fine-mesh sieve to remove the foam
Place it in 4 preheated ramekins, greased with butter or margarine, and bake at (200°F) for about 35 minutes, or until clean when tested with a knife
Remove from oven and let cool
Prepare the crust
Cook the sugar in a small saucepan over low heat, stirring constantly, until dissolved and caramelized
Remove from heat, add the almonds, mix quickly, and spread on a greased surface
When cooled, break with the aid of a kitchen mallet
Spread the crust over the chilled puddings
Prepare the decoration
Melt the chocolate, place it in a piping bag with a fine tip, and create the desired design on a sheet of parchment paper
Place the parchment paper in the freezer or refrigerator until the chocolate sets and can be removed from the paper
Decorate the puddings and serve
