Preheat the oven to 180°C
Slice the pears into rounds and soak them in milk
Combine the eggs, sugar, orange juice, water, orange flower water, and well-drained pear in a blender until smooth
Reserve for later

Melt the five tablespoons of sugar and spread it evenly in a baking dish with a hole in the middle
Add the raisins to the bottom of the dish and pour in the pudding mixture
Bake in a water bath until, when inserting a toothpick, it comes out clean
Unmold while cold.
