Boil the sweet potatoes in salted water until tender
Drain and pass through a ricer or food mill
Wash the garlic cloves well and remove the skin with a toothpick
Microwave the garlic at medium power until soft, then mash with a fork
Chop the onion finely and sauté it in butter until caramelized
In a non-stick skillet, cook the sweet potato puree with the caramelized onion over low heat, stirring constantly
Add the milk and nutmeg to taste, stirring gently to combine
Serve warm garnished with fresh thyme.
