Wash the sweet potatoes thoroughly
Cook until they become soft
Pass through a ricer (where the sweet potato skins will be retained)
Add butter or margarine, as well as milk
Heat over low heat
Mix well
Cook, stirring constantly, until it starts to bubble
Season with salt and, if desired, with nutmeg
At serving time, taste and adjust seasoning as needed
Serve warm.
