Remove the leaves and tough central stalk
Separate into florets
Wash thoroughly
Place in a pot with milk, salt, and ground nutmeg
Cook slowly, covered, for about 30 minutes, being careful not to scorch the bottom of the pan
Remove the foam that forms on the surface as it cooks
Remove the cooked broccoli in small batches using an immersion blender, and place in a cup of a blender
Blend, adding cooking liquid as needed to achieve a good consistency
Reheat, check seasoning, and keep warm in a water bath
Serve hot.
