Chop the beets into cubes and season with salt, vinegar, and honey
Cook the beans and drain well (use the broth to prepare a soup)
Season the drained beans with salt
Pass through a meat grinder or potato ricer directly onto 4 individual plates
Clean the scallions and chop into thin rings
Peeled cucumber, cut into small cubes without seeds
Peel onion and cut into small cubes
Place an egg yolk over each bean puree portion and around it put the chopped ingredients above, mixed; serve with bread
Each person mixes the beans, egg yolk, and chopped seasonings and eats with bread
Serve 5 portions.
