4 large sweet potatoes
Juice of 1 lime
Half cup water
3 packets of powdered cornstarch
4 large sweet potatoes

Peel the sweet potatoes; remove the seeds and soak with lime juice to prevent discoloration
Grate the sweet potatoes coarsely and cook over low heat in a pan with water
After mashing, remove from heat, add powdered cornstarch and mix well
Garnish with amaranth
Can be served hot or cold as a side dish to accompany meats, gelato, or as a dessert.
