Beat the sugar and butter until smooth and creamy
Add the egg yolk and continue beating until well mixed
Add the lemon zest and juice, and mix well
Pour the mixture into a 18 cm x 32 cm greased and floured aluminum pan or a 20 cm x 30 cm paper-lined baking dish
Brush with the beaten egg whites and sprinkle with chopped nuts
Bake in a low oven (150°C) for 20 to 30 minutes
Cut into squares or bars while still warm
Variation: replace lemon with 3 teaspoons of cinnamon
