For the rice
1 tablespoon of olive oil
1 minced garlic clove
1 chopped onion
Salt to taste
2 cups of uncooked white rice
4 cups of boiling water
200g of mozzarella cheese, cut into small cubes
200g of ham, cut into small cubes
1 can of drained peas
3 tablespoons of chopped fresh parsley
For the cream
2 1/2 cups of milk
3 tablespoons of all-purpose flour
1 tablespoon of butter
2 separated eggs
Salt to taste
2 tablespoons of grated cheddar cheese
For the rice squares
3 lightly beaten eggs
2 cups of cake flour
1/2 cup of sifted whole wheat flour
Oil for frying
Grated cheese for sprinkling
For the rice

1/2 cup of sifted whole wheat flour

Grease a 35cm x 21cm baking dish with a little oil. Reserve
Prepare the rice: in a saucepan with the olive oil, sauté the garlic and onion
Add the rice, salt, and cook for a few more minutes, stirring constantly
Add the boiling water and, when it starts to boil, simmer on low heat, covered, for 15 minutes or until the rice is cooked
Turn off the heat
Cover the saucepan and let it stand for a few more minutes
When the rice has cooled slightly, add the mozzarella cheese, ham, peas, and parsley. Reserve
Prepare the cream: in a blender, blend all the ingredients except the egg whites
Pour into a saucepan and cook on low heat, stirring constantly, until thickened
Remove from heat and carefully stir in the beaten egg whites
Mix well this cream with the reserved rice
Prepare the squares: In the prepared baking dish, shape the rice mixture like a cake
Refrigerate for 2 hours or until firm
Cut into 7cm squares
Dip each square in the beaten egg and then in the mixed cake flour and whole wheat flour
Fry each square in hot oil until golden and place on paper towels
Arrange them in a baking dish, decorate to taste, and sprinkle with grated cheese
Bake for 10 minutes
Serve warm.
