For the dough
125 g of wheat flour
1/2 teaspoon of salt
Cold water
For the filling
1/2 kg of fresh cheese
7 egg yolks
1 egg white
1/2 teaspoon of grated lime peel
2 tablespoons of cinnamon
100 g of butter
120 g of wheat flour
200 g of sugar
For the dough

1/2 teaspoon of salt

To make the dough, mix together the flour and cold water tempered with salt
Add more water until you get a manageable dough
Work the dough well and let it rest covered with a cloth for 10 minutes
Then open the dough thinly and cut into rounds
Place these inside pastry cups previously greased with butter and floured
For the filling
Put the cheese in a clean cloth, squeeze out excess liquid and place in a bowl
Add all other ingredients and mix well
The dough should be quite consistent
Fill the prepared pastry cups and bake
Once done, garnish with a cherry and arrange on paper cups.
