1 package of semi-ready, defrosted puff pastry (400 g)

2 Brie cheeses (150 g each)
1 egg yolk
1 tablespoon of water

Preheat the oven to hot (200°C)
Cut the pastry into 2 equal parts
Unroll one half, very thinly, over a floured surface
Split it in half and place 1 cheese on top
Trim the pastry to fit the cheese, leaving a 2-finger margin
Cover with the other half of the pastry, adjust the edges and seal well by pressing with your fingers
Repeat the same process with the remaining pastry and the other cheese
Place in a baking dish, brush the surface with egg yolk mixed with water
Bake for about 50 minutes, until golden brown
Remove from the oven and serve 20 minutes later.
