1/2 cup grated Parmesan cheese
2 tablespoons olive oil
2 tablespoons annatto oil
2 teaspoons chopped cilantro
1/2 pound crab meat, flaked
4 eggs
2 tomatoes, seeded and chopped
2 cloves garlic, minced
1 onion, chopped
Salt and black pepper to taste
Optional: 15 crab shell fillings

Heat the olive oil and annatto oil in a pan over medium heat
Add the onion, garlic, cilantro, and tomatoes
Stir well
Add the crab meat and stir for a few minutes more
Season with salt and black pepper to taste
Place the mixture into the crab shell fillings
In another part of the kitchen, beat the eggs until they become frothy
Spread them over the filling in the crab shells
Sprinkle grated Parmesan cheese over the top and bake in a preheated oven at 375°F for 5-7 minutes, or until golden brown
Optional: garnish with paprika.
