In a small bowl, mix together the prosciutto, garlic, thyme, nutmeg, and black pepper to obtain a crumbly mixture
Set aside. Reserve
Place the duck in a large roasting pan, brush with olive oil, and sprinkle with salt
Spread the reserved crumbly mixture over the breast of the duck
Cover with aluminum foil and roast in the oven
Roast for about 1 hour and 50 minutes, or until the duck begins to get tender
Remove the aluminum foil and continue roasting for an additional 15 minutes, or until golden brown
Transfer to a serving dish and serve hot.
