Dough
2 cups of wheat flour for quiche
1/2 cup of cooked and mashed pumpkin with fork
1 egg
1 pinch of black pepper
2 tablespoons of chopped parsley
2 tablespoons of finely chopped onion
Salt and orange zest to taste
Filling
1/2 cup of ricotta
1 cup of grated rascal
Salt to taste

Dough: soak the wheat flour in cold water for two hours
Drain
and combine all the dough ingredients
Mix well and reserve
Make the filling: mix the ricotta with the rascal and season with salt
Grease a baking dish and line the bottom with half of the dough
Spread the filling and cover with the remaining dough
Bake in a medium preheated oven until it starts to brown.
