Meatballs
1 kg ground beef (beef or pork lean meat)
2 cups fine flour washed
1/2 onion
3 chopped parsley leaves
Salt and pepper to taste
2 tablespoons cold butter in cubes
Coalhada
1 liter coalhada
1 tablespoon all-purpose flour
1 tablespoon cold butter
2 crushed garlic cloves
1 egg white
1 cup chopped parsley
Salt to taste

Meatballs: season the ground beef with salt and pepper, then process in a food processor
Mix the meat with the flour and pass through the food processor with the remaining temperings
With moist hands, shape small meatballs
Make a hole at one end and place a butter cube in the center
Close the meatballs and reserve
Mix the coalhada with the egg white and all-purpose flour
Pass through a sieve and cook over low heat without stopping until boiling. Reserve
Melt the butter and sauté the garlic and salt
Add the cooked coalhada and simmer for two minutes, stirring constantly
Add the meatballs and cook over low heat for 20 minutes
Add parsley and serve immediately.
