2 cups of crushed salted crackers or grated cheese passed through a blender
7 tablespoons of butter or margarine
2 tablespoons of all-purpose flour
salt and black pepper to taste
2 tablespoons of finely chopped onion
1 1/4 cups of milk
2 beaten eggs
2 cups of cooked green corn, or canned corn kernels

Mix the crushed crackers with 4 tablespoons of melted butter
Reserve 1/2 cup and set aside to sprinkle over the pie
Line a 26 cm diameter refractory mold with the remaining cracker mixture, pressing it gently into the bottom and sides
Melt the remaining butter, combine with all-purpose flour, mix well, season to taste, and add the onion
Add milk and cook, stirring until thickened
Add eggs gradually, mixing well after each addition
Add corn and mix
Pour into prepared mold
Sprinkle with reserved crumbs and bake in a hot oven (400°F) for about 20 minutes or until firm
Remove from the oven and let stand for 5 minutes
Cut and serve warm
Serves 12 portions.
