130g of creamy goat cheese
4 stalks of green scallions, chopped
1 cup of cherry tomatoes, halved

1 pinch of salt
125g of cold butter, cut into pieces

*Basic dough
2 cups of wheat flour
1 pinch of salt
125g of cold butter, cut into pieces
Prepare the basic dough and line a medium-sized rectangular baking dish with it
Fur the dough with a fork and bake in a moderate oven (180°C) for about 20 minutes or until firm, but not golden brown
In a bowl, lightly beat the eggs and season with salt and pepper
Add the sour cream, goat cheese, scallions, and mix well
Pour over the pre-baked dough
Distribute the cherry tomatoes, seasoned with a pinch of salt, and return to the oven for 20 minutes or until golden brown
Serve hot or at room temperature
*Basic dough
Mix the flour, salt, and butter with your fingertips until it forms a crumbly mixture
Gradually add in 1/2 cup of cold water, until the dough becomes homogeneous
Let it rest in the refrigerator, covered with plastic wrap, for 15 minutes
Open the dough and line the baking dish
After baking and reheating, quiches can be wrapped in plastic film and frozen in their original shape (if using a refractory dish)
When serving, bake in a moderate oven (180°C) preheated for 10 to 15 minutes
To check if the quiche is done, open the oven door carefully and balance the baking dish slightly
If the filling is slightly soft in the center and firmer on the sides, it's ready.
