For the crust
2 cups all-purpose flour (240 g)
150g cold unsalted butter, cut into pieces
1/4 cup ice-cold water (60 ml)
1/4 teaspoon salt
All-purpose flour (for dusting)
For the filling
3 eggs
1/2 cup heavy cream (120 ml)
1/2 cup grated Parmesan cheese (50 g)
1/2 cup grated Minas cheese (50 g)
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
For the crust

Preheat the oven to 350°F (medium-high heat)
Make the crust: in a bowl, combine flour and butter with a fork until a crumbly mixture forms
Add the ice-cold water with salt and mix until a smooth dough is formed
Roll out the dough on a lightly floured surface, about 1/8 inch thick, and fit it into a 9-inch round baking dish
Make small holes in the crust with a fork and place in the preheated oven for about 20 minutes, or until lightly golden
Remove from the oven and let cool slightly
Make the filling: combine all ingredients and spread over the crust
Return to the oven for about 15 minutes, or until the filling is set and lightly golden
Serve immediately.
