20 slices of French toast cut into 3 cm thick pieces

In a medium bowl, gradually add the sugar to the egg yolks, beating constantly
Beat until the cream thickens, about 5 minutes
Add the milk, cream, and vanilla extract, mixing well
Let the bread slices soak in this cream for 10 minutes, flipping them once until the liquid has been absorbed
Heat a layer of oil about 5 cm deep in a pan and fry the bread slices, some at a time, turning them until they're golden; it takes about 8 minutes
Remove from the frying pan and dust with caster sugar and, if desired, cinnamon
Serve warm with fresh fruit or in a sauce or gelato
Serves 20 portions.
