Beat the eggs with water
Add the sweet potato and salt, and mix well
Put the flour on a smooth surface and make a hole in the center
Add the egg mixture and knead until it's homogeneous. Reserve
Filling
Sauté the onion in lard for 20 minutes or until golden brown
Add the sweet potato and season with salt and black pepper
Mix well with a wooden spoon and let it cool down
Assembling
Dust a surface with flour and roll out the dough to a thickness of 4 mm
Use a biscuit cutter to cut out the dough and reserve
Pie filling
Place half a teaspoon of filling on each dough circle, close it like a pastry, pressing the edges with your fingers or a fork
Frying
Bring a large pot of water to a boil with 1/2 teaspoon of salt
Carefully add the ravioli and cook until they float to the surface
Remove them with a slotted spoon

Dice the onions into rings, then into four pieces
Fry in hot lard until golden brown and let it drain
Spread over the ravioli and serve
