10 large eggs
10 level tablespoons (from a soup spoon) of sugar
12 level tablespoons (from a soup spoon) of all-purpose flour
A small pinch of yeast
Grated lemon zest or a few drops of vanilla extract
A pinch of salt

Sift the flour together with the yeast
Separate the eggs and beat the whites, along with the sugar, until it becomes a light-colored cream
Add the lemon zest (or vanilla extract)
Use a wooden spoon
Beat the egg yolks in a snow-white consistency, adding a pinch of salt
Mix half of the flour into the yolk mixture
Beat well
Then add one-third of the beaten whites
Beat again
Add the remaining flour and beat for a little while longer
Finally, add the remaining beaten whites, pouring them in gently without beating too much
Put this dough mass into an ungreased baking sheet sprinkled with all-purpose flour
Bake in a medium-temperature oven for 40 minutes.
