In a saucepan, combine the sugar and cornstarch
Add the cold water gradually, stirring well, then the egg whites and lemon juice
Bring to a medium heat and cook until it thickens and bubbles
Cook for an additional minute and remove from heat
Add the grated lemon zest, butter or margarine, and stir well
Let it cool without stirring
Fill 2 and two-thirds cups.
