1 cup of cooked green corn or canned corn, drained
3 tablespoons of finely chopped pickles
2 tablespoons of pickle relish
4 tablespoons of mayonnaise
4 leaves of lettuce, thinly sliced

Mix the green corn with the pickles, pickle relish and mayonnaise
Spoon a small amount of chopped lettuce on each omelette square and top with the green corn mixture
Bake for 6 portions.
