Chop the cabbage, wash it well and place it in a large pot with plenty of water
Cook without covering until tender but still crisp
Add salt to the water a little before completing cooking
Drain
Prepare the white sauce: melt 3 tablespoons butter or margarine, add all-purpose flour and mix well
Add milk gradually, stirring constantly
Cook while thickening, stirring constantly
Grease a refractory mold of 31 x 19.5 cm and layer with cabbage, grated cheese, white sauce, and repeat the layers until all ingredients are used up
Mix biscuit flour with remaining melted butter or margarine and spread on top
Place in a moderate oven (180°C), preheated, for about 20 minutes to warm and melt the cheese
