Boil the sweet potato, peel and cut into slices
To make the sauce: in a large bowl, whisk together red wine vinegar and whole-grain mustard
Gradually add the olive oil while continuously whisking to achieve a creamy consistency
Add the remaining ingredients
If desired, season with salt and black pepper
Dress the sweet potatoes with the sauce and mix well but delicately
Serve warm.
