1 1/2 cups finely chopped onion
4 tablespoons butter or margarine
3 tablespoons sugar
8 cups red cabbage, washed, finely chopped
2 cups pearled barley without seeds, cut into cubes
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
to taste
1/3 cup red wine vinegar
2 cups red wine
1/2 cup raisins

Sauté the onion in butter or margarine until softened
Add the sugar and caramelize
Combine the red cabbage, barley, salt, black pepper, red wine vinegar, and raisins
Cover the pan and cook slowly, stirring occasionally, for 10 minutes
Add the red wine and raisins and cook in a covered pan with some added water if necessary, stirring occasionally, for about 45 minutes
Serves 12 people
Serve with duck or roasted meats.
