1 chopped onion
3 tablespoons of butter or margarine
9 cups of shredded red cabbage, grated coarse
1 large apple, cut into small squares
3 tablespoons of vinegar
1 cup of water
3 tablespoons of sugar
1 tablespoon of raisins
salt and black pepper to taste
1/3 cup of seedless raisins

Sauté the onion in butter or margarine for 5 minutes
Add the cabbage, cover, and cook for another 5 minutes
Combine the remaining ingredients, cover, and simmer at low heat for about 10 minutes
Serve with pork, if desired
Portion into 6 servings.
