1 Heat the olive oil and sauté the onion
Add the tomatoes and cook for five minutes
2 Add the Arborio rice, parsley flakes, and cook for another five minutes
Add the almonds, ricotta cheese, and season with salt
3 Gradually add the hot water, stirring occasionally to prevent the almonds from breaking apart
Be careful not to let it boil over
