In a large skillet, heat the olive oil, sauté the onion and garlic with salt and pepper
Add the peas, tomatoes, mixed spice, and cooked shrimp
Let it simmer for a few minutes, then add the white rice and stir well until it takes on the color of the mixed spice
Garnish with chopped parsley and a hard-boiled egg, and it's ready to serve.
