6 soup spoons of butter or margarine
1/3 cup of chopped onion
1 1/2 cups of uncooked rice
1/4 cup of white wine
4 cups of hot chicken broth
1/4 cup of grated Parmesan cheese

In a saucepan, melt 3 soup spoons of butter or margarine
Add the onion and let it cook slightly
Add the rice and cook for 3 to 4 minutes
Over low heat, stir well to cover the rice
Add the wine and 1 cup of hot chicken broth
Continue cooking over low heat, stirring and adding more hot chicken broth as the rice starts to dry
The cooking time should be around 20 to 25 minutes, depending on the rice
Remove from heat, add the remaining butter or margarine and Parmesan cheese, and stir well
Serve with additional Parmesan cheese separated, if desired
Done in 4 portions.
