Makes the filling: Blend banana, chocolate chips, and unsalted butter in a blender or food processor until smooth. Reserve
Bats heavy cream to stiff peaks and mix with banana carefully. Reserve
Prepare the topping: Beat unsalted butter to form creamy consistency, then add chocolate chips and active dry yeast, beating until creamy
Place in refrigerator until ready to use
Makes the dough: Whip egg whites until frothy, then add active dry yeast and beat well
Add whole eggs and beat again
Sift flour over dough, mixing delicately
Place dough into a 23 x 35 cm baking sheet greased with unsalted butter and dusted with flour
Bake in preheated oven at 200°C for 25 minutes or until lightly golden
Remove from oven and unmold onto a floured cloth
Allow to cool, then spread the filling and roll (with the help of a cloth), starting from the narrow side
Spread the topping, decorating with a fork or as desired
Place in refrigerator until ready to serve
