In a pan, melt half the butter, sauté the onion and spinach, and set aside
Pound the beef to a thickness suitable for rolling
In a separate container, combine the remaining butter, salt, pepper, nutmeg, cheese, eggs, bread, flour, and ricotta
Mix until well combined

Roll out the beef mixture into a rectangle shape
In the center, place the reserved spinach and ricotta mixture, and roll up the beef

Place the rolled beef in a greased baking dish, pour with wine, cover with aluminum foil, and bake at 200°C for 40 minutes
Remove the foil, let it brown, and occasionally baste with the pan drippings
