4 eggs (separated whites and yolks)
1/2 cup of cornstarch (90 g)
1/2 cup of wheat flour (60 g)
1 tablespoon of baking powder
2 tablespoons of cornstarch (for dusting)
For the filling
1 cup of pineapple gelatin (300 g)

Preheat the oven to 400°F (hot)
Grease a 23 cm x 34 cm baking dish with butter
Set aside
Prepare the dough: in a mixer, beat the egg whites until stiff peaks form (approximately 1 minute)
Add the cornstarch and yolks and mix until light and fluffy (approximately 2 minutes)
Add the wheat flour and baking powder and mix delicately with a spatula
Place the dough in the reserved baking dish and bake in the preheated oven until it starts to come loose from the edges (approximately 20 minutes)
While the dough is baking, place a clean tablecloth over a smooth surface and dust with cornstarch
Prepare the filling: in a small saucepan, melt the pineapple gelatin over high heat, stirring constantly (approximately 2 minutes)
Set aside
Remove the dough from the oven and demold it onto the tablecloth
Spread the reserved pineapple gelatin evenly over the dough
With the help of the tablecloth, roll the dough around the filling, using the larger side
Transfer to a decorative plate and serve immediately
