4 chicken strips
Salt and black pepper to taste
4 slices of prosciutto
1 cup (chopped) of grated cheese
3/4 cup (chopped) of toasted and ground almonds
2 lightly beaten eggs
1/3 cup (chopped) of butter
1 spoonful of oil
1/4 cup (chopped) of grated cheese in coarse grating
4 chicken strips

1 Beat each strip with a meat mallet until uniform thickness is achieved and season with salt and pepper
Cut the prosciutto slices in half and place two halves on top of each strip
Sprinkle three spoons of fine-grated cheese
Roll up the strips carefully and secure each roll with a toothpick
2 Mix the remaining fine-grated cheese with ground almonds
Dip each roll into beaten eggs and then ground almonds. Reserve
Preheat oven to 220°C
3 Melt butter in a pan and add oil
Brown the rolls and reduce heat
Leave for another 15 minutes
4 Drain the rolls, remove toothpicks and sprinkle with a little coarse-grated cheese
Arrange the chicken on an oiled baking dish and bake until golden brown
Serve immediately.
