Eggplants
Dust the eggplant slices with salt and let them sit for 30 minutes
Wash, drain, and dry the eggplant slices with parchment paper
Preheat the oven to medium temperature
Arrange the eggplant slices side by side in a large, flat dish and brush with olive oil
Reduce the oven temperature and place the baking sheet in the oven, letting it bake for about 30 minutes
Flip the eggplant slices halfway through the cooking time so that they cook evenly
Let them cool and, while doing so, prepare the sauce

Fry the garlic and onion in olive oil and add the tomato puree
Add water and season with salt
Cook over medium heat, stirring occasionally, for 20 minutes or until the sauce thickens
Add parsley and remove from heat
Assembling
Cover the eggplant slices with a layer of ricotta cheese and distribute mozzarella cheese on top
Make an eggplant roll with each slice of eggplant and place parsley leaves at the ends
Arrange the rolls side by side in a refrigerator dish and pour the sauce
Dust with Parmesan cheese and bake in a preheated oven until the cheese melts (about 30 minutes)
If desired, wrap with plastic wrap and freeze
