6 medium cooked, chilled, and cut into small cubes
1/2 cup chopped fresh parsley
1/2 cup diced cucumber
1/4 cup finely chopped onion
1 1/2 teaspoons salt
black pepper to taste
3/4 cup salad dressing (olive oil, vinegar, salt, and pepper)
2 tablespoons mayonnaise
thin slices of roast beef (can be store-bought)

Mix together the parsley, cucumber, onion, salt, black pepper, and mayonnaise
Spoon over the batata and mix carefully
Place a little of the mixture on each slice of roast beef and roll up like a roulade
Refrigerate until serving time
Make 5 to 7 rolls.
