Beat the eggs until they are very light and fluffy
Add the sugar gradually, beating well
Add the melted butter or oil
Sift together the yeast, salt, and 1 cup of flour
Alternate adding the dry mixture with milk, lemon extract, and enough flour to form a soft dough
Let it rest in the refrigerator for 30 minutes
Roll out the dough on a lightly floured surface (the lighter the dough, the more airy the doughnuts will be)
Cut into rings and cut another ring from the center
Fry in hot oil or deep fryer and drain on paper towels
The outer rings can be fried separately or join the dough and open it again.
