Prepare with at least 3 days' notice, if possible, and store in airtight containers
Make the glaze: combine confectioner's sugar, cream tartar, and egg white in a small bowl
Beat with an electric mixer on low speed until you get a thick and shining glaze
Set aside one-third of this glaze and add green food coloring gradually, stirring well to achieve the desired shade
Place a little glaze underneath 24 coconut rolls
Cover them with the remaining 24, making sure the decorated sides are visible
Cut candied cherries into three pieces and garnish the rolls
You now have 24 nativity rolls.
