6 cups cooked black beans (not too mushy)
3/4 cup finely chopped onion
1/2 cup chopped green bell pepper
Seasoning:
3/4 cup chopped fresh cilantro
2/3 cup white vinegar
1/2 cup olive oil
1 tablespoon salt
1/2 teaspoon black pepper

Drain the beans and add the bell pepper and onion
Let it marinate in the seasoning for at least 2 hours
Strain the seasoning and serve over lettuce leaves
Serve 8 portions.
