Ingredients:
Honey Mustard
1 tablespoon of mustard
2 tablespoons of honey
2 tablespoons of vinegar
1/4 cup of water
1/3 cup of olive oil
Salad
1/2 pound of curly endive
1/2 pound of red leaf lettuce
4 cups of radicchio with stems removed
1/2 cup of arugula leaves
8 fresh figs, washed and dried
3 egg whites, beaten slightly
1 cup of cake flour
100g of crumbled feta cheese
For frying
1 cup of oil

Honey Mustard
Mix all the ingredients
Refrigerate until serving time
Salad
Wash the greens well, pat dry, and reserve
Wash the figs well, pat dry, and dip them in the beaten egg whites
Dredge the figs in cake flour
Fry in hot oil until golden brown
Drain on paper towels
Assemble the salad by arranging the greens, placing the figs and cheese on top, and serving with the honey mustard sauce
